Introducing the Versatile Barbecue Hobo Pack

These tasty Hobo Packs offer a hot side for your summer barbecues. They can be prepared in advance before the barbecue is even alight allowing everyone to be outside and enjoy the summer sun!

Hobo boxes: With these recipes please monitor throughout to ensure they do not over cook.

Thai Butternut Squash Curry Hobo Packs

For the Thai paste you will need:
2 red chilies
Half a thumb of fresh ginger peeled
3 cloves garlic peeled
1 bunch coriander – just use the stalks for the paste
1 teaspoon tomato puree

400ml coconut milk
1 tbsp caster sugar
pinch salt

Method:
Blitz the chilies, ginger, garlic, coriander stalks and tomato puree together. Once in a paste gradually add one can of coconut milk and continue blitzing until smooth.  Add one tablespoon of caster sugar together with a pinch of salt.

Chop 1 inch squares of butternut squash and add to the curry sauce. Place all into a foil container and wrap in a couple of layers of tin foil.  Add to the barbecue coals for about 45 minutes, turning the packages every 10 minutes with tongs.

Roasted Vegetable Hobo Packs

Half shallots, dice yellow and red peppers, courgette and aubergine into one inch pieces. Place them into a bowl together with whole cherry tomatoes.

Using a pestle and mortar roughly grind the rosemary, peeled garlic, sea salt and pepper. Add a slug of olive oil and mix with the vegetables. Place into the hobo foil dish and wrap in a couple of layers of tin foil. Place in the white coals for about half an hour, turning occasionally with tongs.

 

Prepared in advance, easy to cook and a great vegetarian option for your next barbecue!
